### Super simple pumpkin soup (serves 2 to 3)

It’s a simple but sweet and creamy warm soup. Adding spices would be lovely, but today, it’s just onion koji to give it a great nutrient and umami flavour.

### Ingredients

- Chopped pumpkin 600g
- Water 500ml
- [Onion koji](https://tomiescuisine.co.uk/featured/delicious-onion-koji-recipe/) 3 tbsp
- A scoop of[ Overherd oat milk powder](https://overherd.uk/xaxfmk?ref=tomiescuisine.co.uk)

1. Place the chopped pumpkin into a pot with 500ml of water. Put the lid on and start with high heat. Once it starts boiling, lower the heat and cook until the pumpkin gets soft.
