A Carrot Dressing That Changed My Mind About Carrots
Confession time: I’ve never been a huge fan of carrots. Ever since I was a kid, they’ve just never excited me. But I do know how good they are for you: loaded with vitamins, antioxidants, and other great nutrients. So I always try to keep carrots around and sneak them into our meals.
This dressing? It’s one of my favourite ways to do just that. It's vibrant and packed with flavour. Plus, it uses simple ingredients that are easy to find all year round.
Now that spring is here and fresh veggies are filling the markets, this dressing will level up your salads and veggie bowls. It’s so tasty, it’ll have you reaching for seconds, and make you look forward to eating more vegetables!
Nutricious Carrot Dressing
Ingredients
- 80g carrot, peeled and chopped
- 50 ml apple juice or ½ a small apple (about 40g)
- 2 tbsp onion koji or ½ a small onion (about 45g) + a pinch of salt
- 1 tbsp honey or maple syrup (25g)
- 1 tbsp soy sauce
- 50ml olive oil
- 50ml vinegar
- 1 tbsp tahini or whole grain mustard
Pro tip: If you prepared some onion koji, use it! It brings deep umami that takes this dressing to the next level.
Want a creamier taste? Go with tahini. Craving something tangier? Whole grain mustard gives it a honey-mustard twist.
How to Make It

- Add all ingredients to a wide-mouth jar (to use a hand blender) or blender.
- Blend until smooth and thoroughly combined.
- Taste and adjust if needed—maybe a splash more vinegar, a touch more honey, or a bit more salt.
- Pour into a sterilised jar and store in the fridge.
This dressing keeps well for about a week. Just give it a good shake or stir before using.
Note: If you use raw onion instead of koji, the flavour may be a little sharp at first, but don’t worry, it mellows out after resting in the fridge for a day.
